In the last 48 hours I took my last nutrition final ever and an 80 something woman on the subway asked me if I enjoyed being a transvestite, so I’m not sure I have the mental capacity to give this one an introduction. Korean Salmon with Broccoli and Brown Rice
Serves 1
- 1 (4 ounce) salmon fillet
- 3/4 cup cooked brown rice
- 1 cup broccoli flowerets
- 3 Tbsp Korean Sesame sauce (Whole Foods)
- Salt, Pepper (optional)
Place salmon and 2 tablespoons of Korean Sesame sauce in a ziplock bag. Refrigerate for at least one hour.
Preheat broiler. Remove salmon from bag and discard left over sauce. Place salmon on a broiling pan, lined with aluminum foil and sprayed with cooking spray. Broil for 2-5 minutes, once brown on top cover with aluminum foil. Broil for an additional 5 minutes or until fish is cooked through.
Meanwhile, steam broccoli until tender (5-10 minutes). On a plate, place brown rice and top with steamed broccoli. Microwave remaining Korean Sesame sauce (1 tablespoon) for about 15 seconds. Drizzle over broccoli. Top with cooked salmon. Season with salt and pepper if desired.
